Native starches
Starch is the primary source of dietary carbohydrates, found in many fruits and vegetables, in pasta, bread and beans. Our partner Kröner Stärke refines the starch from wheat, corn, rice or tapioca. These are the pure, native starches, as they occur in nature: in the form of starch granules in plant cells. Native starches are not soluble in cold water.
Depending on the intended application, native starches are processed into modified starch (not to be confused with genetically modified starch). Due to the treatment of native starches, physical, enzymatic or chemical, the properties can change: for example, the starches can be used in foodstuffs as a thickener, stabilizer or emulsifier.
